    8.5mm Golden Tapioca Pearls Recipe

    Ratio Tapioca pearl : Water 1 : 10
    • 500g Golden tapioca pearls
    • 5,000 L water
    • 120ml Fructose syrup or Caramel syrup
    1. Boil water in the pot.
    2. While waiting for water boiling:  weight the dry tapioca pearls for 500g, and pour dry tapioca pearls into the colander. Sieve the tapioca pearls, weeding out the crushed bits and set it on the side.
    3. After water is boiled, slowly pour tapioca pearls into the pot and continuously stir to prevent the pearls from sticking together.
    4. When the tapioca pearls start to float, start the timer for 40 minutes and turn the heat to medium heat. The tapioca must boil continuously. Keep stirring every 5 minutes to prevent the tapioca pearls from sticking in the pot.
    5. After the timer sounds, turn off the heat and cover the lid of the pot. Set the timer for another 40 minutes.
    6. Prepare to rinse the water out from tapioca pearls and clean the tapioca pearls by pouring the cooked tapioca pearls into the colander and washing tapioca pearls with cold water for 2 - 3 times until the pearls are nice and cold.
    7. Pour the tapioca pearls into the bowl and add fructose syrup or caramel syrup.
    1. Adding fructose syrup or caramel syrup in the tapioca pearls will create more flavour in tapioca pearls and help tapioca pearls not stick together.
    2. Wash tapioca pearls with cold water after cooking will help the pearls not stick together.
    3. The shelf life of cooked tapioca pearls is 3 - 4 hours at room temperature.
    4. If you want softer tapioca pearls, you can adjust the cooking time to 45 minutes.
