As the temperature rises, so does the competition for the ultimate summer drink. Customers are no longer just looking for something refreshing to beat the heat; they want an experience. They want a drink that is highly shareable, visually stunning, and looks incredible on their social media feeds.
If you are looking for that one standout ingredient to make your summer menu go viral, look no further. Meet our brand-new Gradient Colour Beverage Powder.
Made with all-natural purple cabbage, this powder allows your baristas to mix up mesmerising, colour-shifting mocktails, iced teas, and fruit blends that change colour right in front of your customers' eyes.
Here is why this powder is the secret weapon your café or bubble tea shop needs this season.

The secret behind this theatrical colour shift isn't artificial additives—it’s nature’s own chemistry.
Our powder contains a natural plant pigment called anthocyanin, which is highly sensitive to the pH level (the acidity) of its environment.
The Purple Base: When dissolved in a neutral base like plain water, light syrups, or green tea, the powder yields a deep, royal purple hue.
The Pink Transformation: The moment your baristas add an acidic or sour element—such as lemon juice, lime juice, passionfruit, or grapefruit—the pH drops. The anthocyanins instantly react to the acidity, causing the liquid to shift from a cool purple to a vibrant, bright pink.
By layering your ingredients over ice, you can easily create flawless gradient layers that swirl into new colours as the customer stirs their drink.
We understand the hesitation. When you hear "purple cabbage," you think of savoury dishes, not a premium summer menu item.
You can rest easy: Our powder has absolutely zero cabbage smell or taste.
Through a specialised, gentle extraction process, we isolate the beautiful colour-changing pigments and completely remove the compounds responsible for that distinct, vegetable aroma. What you are left with is a completely neutral, clean base.
Does it have any taste at all? Yes, it has a subtle, clean sweetness because it contains a touch of sugar. This minor sweetness is designed to blend seamlessly into your existing café recipes without overpowering your signature ingredients. It simply enhances the overall mouthfeel while keeping the flavour profile adaptable.
If you run a bubble tea shop or a trendy café, you are likely already familiar with Butterfly Pea Flower.
How does our purple cabbage powder compare? In terms of the magic, it works exactly the same way.
| Feature | Butterfly Pea Flower | Our Purple Cabbage Powder |
| The Magic Molecule | Anthocyanin | Anthocyanin |
| The Trigger | Acidity / Low pH (Sour flavours) | Acidity / Low pH (Sour flavours) |
| Colour Transformation | Blue to Purple/Pink | Purple to Bright Pink |
| Flavour Profile | Mild, earthy/herbal | Completely neutral & slightly sweet |
While butterfly pea flower is fantastic, it can sometimes introduce a distinct earthy, herbal tea flavour that clashes with delicate fruit profiles. Our cabbage powder offers the exact same scientific wow-factor but is completely flavour-neutral, giving you total creative freedom over your beverage recipes.
To help your team craft flawless, Instagram-ready layers with total confidence, here is the exact guide to mixing and layering.
For the best colour intensity and performance, we recommend a standard 1:20 mixing ratio:
Mix 50g of powder with 1 litre of water to create your purple gradient mixture.
By gently pouring 100ml of this gradient colour mixture directly over ice onto the top of a sour fruit drink, you will instantly create a stunning tri-colour effect (for example: a yellow fruit base at the bottom, a bleeding pink middle layer where the acid reacts, and a royal purple top layer).
How do you get those clean, distinct layers without the colours immediately bleeding together? The secret is all about liquid density and sugar content.
Liquids with more dissolved sugar are heavier and denser, meaning they naturally sink to the bottom. Liquids with less sugar (and more water) are lighter and float on top.
Layering Like a Pro: If you want to float our purple gradient mixture on top of a lychee fruit tea, ensure your lychee base is sweeter (denser) than the top mixture. The heavy lychee syrup will anchor itself at the bottom of the cup, allowing the lighter, purple mixture to sit perfectly on top.
Troubleshooting Your Layers: If your layers are blending together instead of separating, the densities are too similar. To fix this, you have two quick options behind the bar: either add a splash more lychee syrup to the bottom base to make it heavier, or dilute your gradient colour mixture with a touch more water to make it lighter.
